TL;DR: super tasty food, very original and beautiful highly recommend!
We have been in the Dolomites since 2 weeks and I can say Fvsion was the best restaurant we have done.
Its located just outside of the main touristic area, we went by walking in 10 minutes. The restaurant it located at the bottom of a complex appartement building, there is no view but they did a good job at designing the indoor.
We came at 6:30PM which is extremely earlier by Italian standards, we were not served rapidly. Overall the service was not fast but the staff was nice
The food was great. Every dish was carefully design in a nice looking plate. You can go classic Japanese food but they also offer more original choices. I started with the Soft Egg (with morlacco cheese and black truffle, excellent. If the chef is reading this I would say it was a bit too salty, but very fine other than this. I then had the Raw of Scampi and Porcini Mushroom which was also delicious. Then the Soba Noodle, the flavors of this dish were amazing, I especially liked the “essence of fir” – well played. We finished with the Tiramisu Breakdown that has nothing to do with a tiramisu but was nonetheless amazing.

I'm lucky enough to have enjoyed meals at many Michelin starred restaurants around the world and I vouch for the Yuzu dessert undoubtedly being of Michelin star quality and a perfect example of clever fusion, mixing Italian and Japanese flavours delightfully. I also had the ramen which was delicious, well balanced, and warming. Beyond the food, the decor and particularly the attention to detail was immaculate. Read moreAfter 7 days of only eating Italian food, it was nice to find an Asian restaurant in the Dolomites. It would have been nicer if the poke and the sushi were actually enjoyable to eat, especially at the inflated price point. It would have been even nicer if the restaurant informed us that the main road to their location was closed, so that we didn't have to waste 30 minutes trying to figure out how to access their already hidden entrance. Perhaps, I would not have taken the time to write this review if the staff were somewhat sympathetic to our frustrating efforts trying to access their location.
