If you wanna find an authentic Emilia experience exit at Modena sud and find one of the many Trattorie you can find on the road. The Trattoria Paganine from the same Paganine Village is one of the little gem you can find on this exit. Without any frills and with a service of other times, other manners here you can find the truly Italian pasta experience with a triple of pasta. They usually start with tortelloni filled with goat and cow cheese in a butter and sage sauce so delicate you won’t even notice. The pasta dough here called “sfoglia” is so thin and yet consistent that is be the perfect fit with the cheese inside. And the waiter won’t even serve you a usual plate. He will come to you with a big plate asking you to say “stop” when your course is done. After that we had a wonderful “Rosetta” that is the sfoglia rolled up with cheese and Parma’s cotto (ham) one of the best. I cannot even describe you how this second “first course” can compar ero the first one. It’s a journey where each course enrich the previous one. After the Rosette the waiter add a quarter first course to our meal: the “Fettuccine with mushroom”. These one, still handmade and crafted fresh in the morning are a remarkable reminder of how good this sfoglia can match with other variation of Italian cuisine. After fettuccine we had the only pasta not handmade by the trattoria “Gramiglie with ragù di salasiccia”. Emilia is famous for it’s ragù but if this is the first time you try this, believe, you’ll be astonished after this quartet. After that, despite we were full we asked for “Gnocchi fritti” with Prosciutto Crudo and Salami. Gosh, this little fried dough looks like it was meant to be married with this ham and salami. Just Amazing, even after 4 first course. After that we ended up with the barozzina, a local dessert made with walnuts coffee and mascarpone cream. At the end of all this, we pay something like 35€ each, with two Lambrusco Wine bottles. If you are still reading this I’ll tell you, whatever are the reasons you stumbled upon here just exit at Modena sud and try one of the trattorie around here. You’ll find a surprising amazing culinary experience.

I can say this is one of the best meals I've had in Italy. If you want authentic, this is the place for you! Serving sizes: You decide! And if you want some more you just have to ask! We managed to get a table on a Sunday without reserving (don't try this, it gets packed, we lucked out!) The staff is as friendly as can be, and the food is as good as it can be! Will definately return when I have the chance!

Tortelloni ottimi, servizio assente, prezzo poco chiaro.
