Ristorante Colombo is a gem of a restaurant. The food, the staff, and the ambiance made Colombo a delightful surprise in a fairly remote farming community, 20 km from the Autostrada. Polesine Parmense is a tiny town on the shore of the Po River and at the center of the district known for Culatello prosciutto. I am not an official “foodie,” but coming from NYC, I’ve had some great meals. Here, everything was just great. The staff were kind and inviting. The inexpensive local wine from the Luretta vinyard was surprisingly full bodied, the tagliolini/tagliatelle were as good as I’ve tasted anywhere in Italy, and the braised veal cheek with mashed potatoes was beefy and full of flavor. Read moreOutstanding dining experience. Began with cured meats and bread. Second course was a ricotta stuffed pasta which was amazing. I enjoyed the flavors of every bite. Main was veal cheek with a highly reduced sauce. The veal was very tender and I was able to cut with a fork. The sauce had been reduced for a long period giving it concentrated flavors and a very enjoyable texture. Mashed potatoes were served with the cheek and provided a good balance to the flavors of the sauce. Finally desert was outstanding. Noi due abbiamo abbiam goduto di antipasto con culatello (buonissimo e non è sempre così buono, nonostante si sia in zona), mariola (la migliore ad oggi mai provata, abbiam fatto il bis) e salame di culatello stagionato. Tutto buonissimo e accompagnato da paté di culatello, burro e giardiniera ottima. Abbiamo apprezzato molto questi accompagnamenti. A seguire tagliolini al ragù di culatello e agnolotti con zucca. Tutto stra stra buono (nonostante fossimo pieni, abbiam mangiato di gusto). Infine i dolci: mousse di cioccolato (che non ho provato personalmente) e zabaione servito con pezzetti di torta sbrisolona. L'arte pasticcera in cucina è decisamente alta. L'unico neo è che il menu non è scritto e non si possono quindi conoscere i prezzi delle varie portate prima dell'arrivo del conto, che comunque abbiam trovato onesto (83 euro con due calici di vino) per la qualità del cibo (e del servizio).
