Don Evandro is a progressive, forward-thinking chef with what appears to be strong roots in the region and the ingredients it offers. From mushroom and onion consommés infused with local mountain herbs to local duck and an apparently local Popoli onion, Don Evandro's mastery of cuisine is excellent and puts him on track for an unbeatable legacy in the region. Don't overlook this restaurant; it's excellent, and I've never written that before. Seasonal, fresh, sophisticated, and down right clever. If that's not enough, the dining is simple, striped back with a modern flair. Like Morandi, he makes jewels out of otherwise humble ingredients: A single onion crowned with a saffron petal (all local ingredients) may be his signature highlight.
