A Culinary Wonderland in Abruzzo
At first glance from the road, this might look like your normal restaurant but once you walk through the doors you know it’s is any but normal fair.
Step through the unassuming doorway of La Vineria di Salnitro in San Martino and you enter a world where history, art, and culinary innovation converge. At the heart of this enchanting experience is Angelo Di Girolamo, the owner and creative spirit whose vision has transformed a centuries-old salt storage building into one of Abruzzo’s most unique and captivating restaurants in this region
Atmosphere & Ambience The moment you cross the threshold, you’re enveloped by a symphony of stone and brick, punctuated by vibrant artwork and eclectic antiques. The interiors are a playful juxtaposition of ancient and modern: steel shelves float bottles of wine in the air, while time-worn beams and whimsical décor—like fedoras, cherub statues, and even a vintage salon chair—set the tone for an experience that’s as mischievous as it is magical. The ambiance is further elevated by a carefully curated soundtrack, often featuring the soulful notes of Mario Biondi, and the gentle hum of conversation, art, and history blending seamlessly.
The Angelo Experience Angelo is more than a proprietor; he is the maestro orchestrating every detail of your visit. His presence is unmistakable—attentive, passionate, and always ready with a story or a witty quip . Whether he’s guiding you through his impressive wine selection or describing the origins of a dish, Angelo’s enthusiasm is infectious. He’s known to open the restaurant on his day off for friends, and his hospitality makes every guest feel like a cherished insider.
The Culinary Journey The menu at La Vineria di Salnitro is a celebration of Abruzzese tradition, elevated and executed by creativity and courage. Dishes are refined yet full of flavor, with fresh, high-quality ingredients and harmonious pairings. Expect the unexpected: from ossobuco ragù pasta to Montepulciano risotto, or a signature baked onion among the antipasti. Desserts, like the deconstructed cheesecake, provide a light, memorable finish to the meal. The menu changes regularly, ensuring that each visit offers new delights and tough choices between tempting options. Last night I had the pleasure of enjoying a seafood menu that was spectacular and ousted any thing found in the Trabocchi Coast. I have had the pleasure of eating at 2 and 3 star Michelin rated restaurants and I will go out and just say that this experience was better than 95% of them.
Wine is central to the experience, with a selection that spans local gems and international finds. Angelo’s knowledge ensures each glass is perfectly matched to your meal, enhancing every flavor and moment.
Service & Hospitality Service is attentive, warm, and imbued with personality. Angelo and his team go beyond mere hospitality, engaging guests in a convivial atmosphere where laughter and learning are as much a part of the evening as the food and wine. The staff’s attention to detail and willingness to accommodate dietary needs make every guest feel valued. If you are visiting the area and speak English don’t let the barrier stop you as they also speak English
Final Thoughts Dining at La Vineria di Salnitro is more than a meal—it’s an immersive journey through the senses, guided by Angelo’s passion for food, art, and community. The restaurant’s blend of history, creativity, and heartfelt hospitality sets it apart not only in Abruzzo but in all of Italy. Whether you’re a local or a traveler, a visit here is a promise of discovery, warmth, and culinary joy.
Too summarized: Angelo has created something truly special—the food, the people, and the place blend into an unforgettable memory. You simply must go and experience it for yourself, as I was leaving I let him know he will be seeing me much more and I’d love to someday cook with him , he agreed and I plan to keep that promise. Thank you again chef !...
Read moreComplimenti Angelo. Simply the best place to eat. The food is always amazing, the first time I ate here 10-15 years ago) I was shocked there was no written menu but pleasantly surprised by the choice and quality of food. It’s gotten better and better over the years and Angelo continues to surprise and excel. The food is not only amazing but fantastic value. I’ve eaten with 4 people for less than the price of one meal in London. I could go on, but would urge anyone who likes great food and a fantastic experience to come and try...

E i dolci, come trascurarli? BUONISSIMI. insomma siamo stati bene ma bene ma bene. Ogni bene ed augurio ad Angelo e a tutta la sua squadra....
