We went for the experimental mood menù set @ €180. The food in itself is really good, with points of excellent and a couple of mind blowing dishes. The Chef will make is calm and kind appearance at your table a couple of times which is more than what you usually get at this level. His wife and the maitre are also the great human touch of the experience. The rest of the staff and the related service are the reason why this rating is a 4/5 and not a 5/5. I heard loud comments made by the staff on other clients ( I agree with the content of the comments btw, but that is simply a Not Go!). If you get lucky the maitre/ partner will give you the narrative of the dish served ( which is part of the experience you are buying); if not you will receive a cold description you will only half hear because of the masks. As we were the last table to arrive we did not receive a tour of the lab as promised and we were basically pushed out of the door as it was late. Not cool at all, as I wanted to buy some products and at least a couple of the books on display. Would I go back? Yes but I would arrive for the early shift and would specifically ask for the maitre to run...

Its difficult to describe an experience here without writing an essay haha, and tbh I always skipped this. When u come into Mariella and Moreno's world everything is perfect. I've been here several times, since he was using liquid nitrogen (please do it again, I really miss that zabaione! 😂😅). Last one was my half's birthday. We followed menu's and wine pairing suggested, that we really appreciated, especially the fact that they try to serve local premium wines like jesi'.

The food was simply perfect, and the atmosphere is something you cannot find in any other high level Michelin restaurant. The staff is able to understand you and they interact and talk and joke following your mood and making you feeling you're really welcome, or just like that guy that comes here everyday; and that's really lovely.

I'll skip on the dinner, just try I'll throw in "his anguilla is one of the best things I've ever experienced". We loved cotton candy, honestly was sweet lovely and fluffy, nothing could have been better. And the gifts are on pole position on the shelf!
