Although Carbonella is not in Firenze, the type of beef and the quality of their cuts are quite equivalent. We had the T-bone Marchigiana which is local to this area and very good. Surprised to see Waygu from Japan! Also had the local specialty of stuffed olives and lardo crossing with rosemary. All very tasty with vino rosso. Ambience is a little bland and not remarkable. Service was very friendly and helpful. We had a good meal so def recommend.

During our holiday in the Marche we visited this restaurant twice. We liked the cool, shady and beautiful garden, the impeccable service and the sumptuous meals. Our favorite meals were: tagliatelle with slow-cooked ragout, T-bone steak (Costata Carbonella DryAged) and the grilled lamb (Lo Schizzinoso). Their sangiovese house wine goes well with all meals. Highly recommended!

Era qualche anno che volevo provare il Carbonella a Rio Salso. Finalmente qualche giorno fa ne ho avuto l’occasione! Bastano pochi secondi per capire di cosa stiamo parlando, un posto dove, anche se non sei mai stato, ti senti a casa nel vero senso della parola! L’accoglienza di Mattia e Martina è calorosa e sincera ma nello stesso tempo professionale. Si è tra amici. Si passa da qualche chiacchiera per conoscersi alla descrizione puntuale delle prelibatezze che stanno cuocendo in cucina. E in cucina non c’è una griglia normale.. c’è Josper un forno-griglia di origine spagnola che permette di grigliare, abbrustolire, affumicare col carbone vegetale creando un prodotto finale succoso e croccante impareggiabile. (Non ne conosco precisamente le caratteristiche ma Mattia ve le spiegherà). Chiaramente in cucina c’è anche un grande cuoco, Isidoro che abbiamo avuto l’occasione di conoscere velocemente a fine cena. Vista la piacevole temperatura abbiamo cenato in giardino. L’atmosfera serena del locale facilita anche le chiacchiere tra i tavoli, tanto che i nostri bimbi sono scappati a giocare nel prato con i bimbi di altre tavolate 😉

Ah sì abbiamo anche mangiato! Olive ascolane farcite a mano spaziali, dei tortellini cacio e pepe ottimi, dei cascioni alle verdure ricetta della nonna di Martina e chiaramente una bistecca, credo di brontosauro, di un livello superiore. Sui dolci potete scegliere a caso tanto si va sul sicuro! E il vino proposto da Mattia ci ha fatto godere ancor di più la serata.

Unica cosa negativa, è che abito in Trentino e non potrò...
