茹でた麺を冷水で洗うと、どんどん締まっていくのが手触りに伝わってくる。 いつもは「ざる」で頂きますが、今朝は鴨肉とネギを焼きかけ蕎麦に乗せて「鴨南蛮蕎麦」で頂いた。 鴨肉から油が滲み出て、かけ出汁の味が進化して思わず「旨い」と言ってしまいました。 蕎麦もしっかりとして、歯応え喉越しが素晴らしい。残り後一食分、どんな食べ方にしようか楽しみです。

よく野沢温泉に行くのですが、帰りに飯山のツルヤでこちらの「新富倉そば」を買っていきます。乾麺ですがとても美味い。 田舎そばらしい食感で飽きがきません。 また野沢行った際には買いたいです!
