Sushi Kawashima is a hidden treasure. Before we arrived, I wondered why it would be worth going so far (South of Nara) to eat sushi in a country full of high-quality sushi. Chef Hiroyuki Kawashima showed me to be foolish as each course was a gift to my soul. My companions and I learned about each fish as we enjoyed the unique preparations and stellar quality traditional sushi. The flavors were woven together in a beautiful story as more complexity and umami were added throughout the evening and I understood the importance of the restaurant's location in the heart of so many premium quality ingredients.
