The older gentleman who cooks needs to stop using his bare hands. I witnessed he dealt with money, then right after went to cook, touched the raw meat with his unwashed hands, touched the pickled bamboo with his unwashed hands, put the green onions in the bowl with the same unwashed hands, even wiped his hands on his apron etc. Who knows if the apron is even washed or how many times raw meat stains on his hands were wiped on the apron. Japanese people aren’t noisy in general, they would sit and absolutely not observe anything because it may seem rude or they just expect better. But I am not Japanese, I like observing, especially if it’s an open kitchen. I felt bad to leave tbh because the service was good. So I ate the noodles only. The taste was decent. But those unsanitary actions really made me uncomfortable....

Flavors were good! An enjoyable meal and authentic atmosphere worthy of a stop if you’re in the area.
