Malabar is a region with a long culinary history, a consensus on what constitutes its authentic cuisine is stoking a debate. Strong trade links with the Arabs, the Europeans, and even the Chinese for centuries have collage about thakkarainfluenced their culinary character and it has seeped into the Malabari cuisine a lot deeper.
Malabar Biryani, has specialty with its two variants, the Kozhikode Biryani and the Thalassery Biryani, which can rival the best in the country, be it the Hyderabadi or the Awadhi (Lucknowi) versions. The Malabar Biryani with definite Arab influences manages to create its own identity. âThe primary difference is the type of rice. While in almost all the other regions, the long-grained rice, mostly basmati, is used, here we make the Biryani with kaima â the short grained rice.
If there is one dish we would say typically of Malabar, it is the Pathiri. The wafer-thin pancake made with rice dough is undeniable part of the âSalkaaramâ in muslim household when the groom comes to stay in brideâs house. Pathiri comes in all forms â fried, steamed, roasted, and baked etc.

Coming to the point there is a newly opened sheshaw bar opened in the complex, smoke coming from there is completely filled in the restaurant and it was choking, regarding hygiene cockroach is running around the seating area and about the food, it is not good as earlier I posted my bill for reference, ordered parota and kadal kootu curry, it was unique earlier but now they have common curry in which they mix whatever we ask for, ordered chemmeen kizhi They give the same common( kadal kootu curry) curry with some prawns in it, in which I can see squid and fish skin which was seen in my previous curry, they donât have curtesy to tell customer that Iâm going to get same dish in different form, it shows theyâre least bothered about the customer satisfaction, service needs some more professionalism, I spoke to the manager he was kind to admit the issues but they were not much concerned to rectify it.
