MALTA'S FINEST RESTAURANT… They say… And it might actually be! Long detailed review, keep reading :)

Terragon is found in the wild in the Mediterranean. It is both and refined in taste, and this description fits the Restaurant very well. Its attempt to be familiar and faithful to Maltese cuisine while bumping it up a notch. This might be the child of a local everyday Restaurant crossed with a gourmet experience.

The food will be described in greater detail later.

Every person you will ever encounter is highly trained and floor management works great. Waiters and sommelier works together to create a wonderful harmony. Water and wine is refilled and at least one waiter is always available. The attention to the guests is exemplary. Glasses are polished and are spotless, wines are offered in practically all vintages and the sommelier is very knowledgeable, and the winecard is very widespread and covers from cheap to extremely expensive. However you can't find a directly bad wine in the card.

The Restaurant is dark, moody and cosy, with large windows and a splendid view to the harbor. Every table is set with good quality cloth.

Now for the food. All starters are generally good, but a few of them is also quite excellent. The pan seared Foie Gras is beautiful and complex with apple chip garnish making this dish a well-balanced, mouthwatering masterpiece. In their speciality menu they have Scottish Scallops, and these are indeed a delicacy. If you are in for a medium size meal, the risotto as starter is one of the best on the island. All starters will make you full, they are that big.

For main course, all dishes seems to be another story. They are very big, but im contrast to the brilliant and well balanced starters they fall short in finesse and complexity.

To recap, my advice is, order only starters, share them at the table and make yourself a tasters feast in the gourmet...

I have to save myself from mouthing off too loud because if I can’t get a table here I’d lose my mind. My deepest taste buds leapt to my tongue as the delights lined up to leave my jaw punch drunk with kisses, as the originality of the food presentation was only outdone by the full moon and the excellent cool evening. It’s still in my blood, and feels like a smile this morning, or maybe I’m still in the afterglow of last night. What a hell of a date with destiny, gastronomy and original talent. A palette of food to die for, my advice is, starve all day, clear your taste buds with apple because you’re favourite assault of your senses is going to come true, from the moment you step in to the destiny of yourself and this place. Like trying to describe an emotion, my heart takes over and silence reigns, as flavour emerges from everywhere. Go there and you’ll never be the same again. I stopped my daughter from photographing, and asked her to literally feast her eyes, as I did on this banquet of intelligent presentation, and by the end of the meal, something in me had formed a new awareness around presence, excellence, artistic presentation and reward. Did I deserve this, let’s just say I must be doing Gods work, I accept my fate and might even see the big man himself dining here when he returns. So bless this place, bless yourselves for booking a table, I’m just jealous that the next time won’t be my first time, and I know you’ll know that delicious feeling too, as I’m certain you deserve this event for your own hard work in your life as well. God save the Gauci. The fisher...

Ambiance and Location

Located along the stunning St. Julian's waterfront, Sole by Tarragon offers a dining experience that blends modern elegance with breathtaking sea views. The sleek, contemporary design of the restaurant is complemented by a warm and inviting atmosphere. Whether you're seated indoors or on the terrace, the ambiance is perfect for both intimate dinners and lively gatherings.

Service and Hospitality

From the moment I stepped in, the service was superb. The staff greeted me with genuine smiles and made me feel welcome. The waiter was knowledgeable about the menu and provided excellent recommendations, enhancing the dining experience with her attentive yet unobtrusive service.

I was on my own so I skipped the appetisers. I opted for the octopus odyssey. It was cooked to perfection, full of flavor, served with a chosen side of broccolini. The octopus was tender and juicy, complemented by a rich red wine sauce and oven baked potatoes. I could taste the layers of every bite. Combined with a superbly chilled Pecorino wine, it was an excellent dinner.

Overall Sole by Tarragon is more than just a restaurant; it’s a culinary experience that delights all the senses. From the stunning location and elegant decor to the impeccable service and outstanding food, every aspect of our visit was superb. It has a nice ambiance to it. Our starters were okay. I wouldn't say super good. I've had better Scallops. Although oyster came with this delicious spicy sauce. Truffles with mushrooms were good. I'd give 2 stars on their service as it took forever to even get Menu. Once we got them ,it looked like they didn't want to explain everything quite clearly, rather make you order with quick decisions. I guess we were there on a bad day as the party on 2nd floor kept them busy, making it hard for them to take care of other customers. The thing I was annoyed most was our main course Fish which on the menu is 31€ for 500g. We ordered only one fish as we knew 500g will be enough for us. The waiter asked and we said yes it's for '2'. We got a big fish like 700g or a bit more without confirming with us. Although the performance on the fish right in front of you was really nice , the taste was nothing special. Normally the nature taste should be better but it was just plain. No side sauce or dressing were provided except for the Basamico & Olive oil which you can find @ every restaurant. Side dishes like vegetables & potatoes were good. But I'm still upset to have paid 55€ while on the menu was 31€. That's how these fine dinings always overcharge you. We reserved a table by the window which we got but it was too much in the corner, also very narrow and no light extended to it. So we got removed by request to the table close to Fish tank where we can finally enjoy the whole restaurant .

I am honestly baffled by all the positive reviews on the food. From the start the food was mediocre at best. A stale tasting cornbread for an amuse bouche, the bland pasta which we obviously only took one bite of, to the very fatty piece of beef, the only thing I found mildly good was the ceviche—but even that was a bit too tangy in my opinion. Service is also completely lacking. Obviously we had not touched much of some of the food, and they asked how it was and I gave honest feedback on how bland the pasta was—there was no response or any effort to fix. So what’s the point of asking us? Also we had a very early dinner reservation and the entire restaurant was empty at 6:30. The sun is still very much out in Malta in the summer and they sat us in a sunny table towards the side of the restaurant. We ask if we can move either inside or to another table in the shade and they said no as there are other reservations coming. I was appalled that I had to ask another time and another person until they finally relented. I do not like to have full sun in my face while eating—especially in a completely empty restaurant. Anyways the meal cost around $165 euros for 2 people, I had much better meals for less at other places in Malta.
