It's wired, I believe the cheff is an authentic Japanese person but the taste of the food feels so unauthentic.
At least I can speak just for my ramen experience there and tell you that meat is so dry and taste flavorless, and stock is lacking all the complexity get from a long term cooking.
Ramen is usually not cheap here in MX, but because is really a unique dish and takes time and effort. This feels like a cheap version with a higher price.
