When we are up in Santa Fe, we always pay a visit to my partner's friend who is a sushi fan. So, it was decided to try different sushi restaurant on this occasion. The restaurant is located on St. Michaels not far I-25 in an unassuming strip mall. We had no expectation of anything special, until a perusal of the menu and we saw, baked green mussels and hamachi kamu (yellowfin tuna "collar.") I lived in the DC area for 30 years I never saw these two items on a menu. The latter is indicative that the sushi chef is processing a whole tuna. Although there are meaty sections of a tuna head, i.e.. fish "cheeks", most fish heads are used for fish stock. The fact that the chef made a dish from the head a of tuna shows me it knows his way around a whole tuna. Our shared appetizers were, miso soup, gyoza, "monkey brains" (stuffed mushroom spring rolls), and seaweed salad. All were very tasty. Our entrees were, Kai sushi roll, beyond good, hamachi kama, quite flavorful and flaky, and the baked green mussels, which were perfectly baked. All were well prepared and very good. Living in a fine dining desert that is Las Cruces, we'll be sure to return to this place...
