Thank God someone in this country knows how to make a semi-accurate imitation of Neapolitan style pizza. I have been to many restaurants that advertise Neapolitan pizzas, but none of them even come close to the type of pizza that is sold in Napoli. The prices were also fair and not meant to scare. I bought two Margherita pizzas for 240 pesos (about 12 USD).
The cheese, sauce, and tomato slices on the pizzas were fresh. I was satisfied with the overall quality of the pizza. However, I would like to make some recommendations in order to help make the pizza more authentic.
Remove the tomato slices. Tomato slices are never used on pizza in Napoli (or most parts of Italy). The taste of tomato is expressed through the sauce.
Use less ingredients. I could not help but notice that the pizza was completely covered with basil leaves and mozzarella. The authentic Neapolitan version has less mozzarella and even less garnishing.
Try to make the dough thinner. The authentic Neapolitan style has malleable crust that is soft and light. No part of the pizza should be making a crunching sound. The soft crust would also make it easier to fold the pizza (the manner in which most Neapolitans eat pizza). This can be achieved by using a specific type of oven and flour. Neapolitans typically use what is called Double Zero Flour. I ordered the spaghetti bolognese and a pepperoni pizza; while the food did come out quick, the spaghetti was completely overcooked making it totally mushy and inedible, the sauce was overcooked and over seasoned making it a soggy mess; the pizza was an utter disgrace, raw dough in the middle and literally dripping in grease, microwave pizza is leagues better over what we were served. It just blows my mind how anyone can ruin something as simple as spaghetti.
Do yourself a favor and DO NOT come here, no matter what the reviews say, this food is completely inedible.
