Makai is a little spot across from a beach path along the highway next to an Oxxo, and it's definitely better than you'd ever expect for all those descriptors. I may have come in with too high an expectation, though, as it was recommended glowingly by a grizzled storytelling American we met at a place in Bucerias, and it didn't quite hit those expectations. The food was interesting, but didn't quite hit - the stingray croquettes mainly tasted of tuna, the gazpacho was beet-based and didn't include any traditional gazpacho ingredients besides avocado - so, basically, borscht. The fish tacos were solid, the crabcake burger unmemorable. The service was fairly slow and didn't seem that into serving gringos, which is fine, I get that. Overall, far better than a roadside spot usually is, not as good as I hoped....
