The low reviews surprise me
This is the best smoked brisket I have ever tasted around the world. And I have traveled to over 35 countries...
My advice for a first order: Go to lunch Wednesday through Saturday. Order the brisket chilaquiles or brisket sandwich and pastrami sandwich and share the plates.
If you can make breakfast, their brisket quesobirria is excellent.
My advice to the restaurant: Please put the brisket quesobirria on your lunch menu and bring back the brisket nachos that were made with french fries. Add a fryer and learn to make the best fresh french fries on the market with a taste goal to be better then Carl's Junior Waffle fries.
Your meat can serve royalty, everything you offer needs to be perfect to complete your meat. Chips, fries, breads etc need to be delicious.
The issue with bread is that has to be homemade fresh and good, which is really hard to keep stocked.
Buying fresh tortillas and frying them fresh takes chips and nachos to a whole new level. I'm so disappointed when I go to a restaurant and order nachos and the chips arent fresh fried.
Making homemade tortillas with lard and then frying them into chips is the ultimate chip level but it's more labor.
Since your offerings are perfect pub food lean into a happy hour pub feel in the evenings with an aim to service happy hour and then close at 8pm or 9pm during the weekdays. Good drafts, good music, limited perfect cocktail menu, games night, sports viewings, etc.
I think you can also offer this as a meeting space during weekdays with a small catering menu focused on the brisket....

the brisket wasn't juicy, soft and warm - sadly the opposite. the pancakes tasted bland and camr from a pancake mix. the fries tasted like old oil. I didn't understand the sauce on the meat. overall not the experience we expected to have. hopefully they just had a bad day.
