Real-deal barbacoa — my favorite meal in Puebla so far.
La Oveja Hidalguense nails everything that matters: flavor, freshness, and that “all homemade” soul. The lamb is insanely tender and juicy, the kind that falls apart with a nudge. The consomé is deep, clean, and full of slow-cooked flavor—you can sip it on its own or use it to baptize your tacos (do it). Tortillas are hand-pressed right in front of you and come out warm, a little puffy, and beautifully corny. Put it all together with a little salsa and avocado and you’ve got the perfect bite, every time.
Service is quick and friendly, and the vibe is rustic and lively—families, locals, and big pots working in the background. Nothing fancy, just great people doing one thing exceptionally well. I love places like this because you taste the craft more than the decor.
