I was very unsatisfied with my experience at Auberge de Verse. The food combinations were unacceptable for fine dining – the starter of mackerel with grilled watermelon felt cheap, heavy, and simply did not work together. The main dish was equally disappointing: no real protein, just unpeeled root vegetables and a spoon of ratatouille, described as “72 hrs baked celery,” which was unappealing. After expressing my disappointment, the server showed little concern. Service was extremely slow – it took nearly 3 hours to receive the main dish, and since I did not eat the starter, I was left starving.
