Auberge de Veste — Restaurant in 's-Hertogenbosch

I was very unsatisfied with my experience at Auberge de Verse. The food combinations were unacceptable for fine dining – the starter of mackerel with grilled watermelon felt cheap, heavy, and simply did not work together. The main dish was equally disappointing: no real protein, just unpeeled root vegetables and a spoon of ratatouille, described as “72 hrs baked celery,” which was unappealing. After expressing my disappointment, the server showed little concern. Service was extremely slow – it took nearly 3 hours to receive the main dish, and since I did not eat the starter, I was left starving. Despite leaving the meal unfinished, I was charged for the full 4-course menu. Overall, a deeply disappointing experience, and I would not return or recommend this...

The restaurant is very nice, chef was incredibly nice and enthusiastic, however… food was nothing special really. Fish was way too dry and served with red wine, which kind of didn’t help the dish. Wine was coming way before the dish and breaks between services were way too long. We spend there almost 3 hours and I left honestly just tired. Was finally able to come and eat here, the owner plus all the employees are fantastic and know what they are doing and cooking. And of course, the food a whole experience on it's own made with love and a lot of knowledge was totally amazing. Enjoyed every bite and every glass of wine mathed with it.
