Locally- and sustainably sourced casual fine dining!

Tucked away in the beautiful small city of Ravenstein, restaurant Versaen blends in perfectly with the medieval buildings. After you enter the restaurant by crossing a glass floor (if you are brave enough) that gives a view into the wine cellar, you are welcomed by the warm- but modern interior and friendly staff. The staff is very attentive and able to accommodate your needs to the best of their abilities.

The dishes were amazing - sophisticated but not overly complicated. We even got an explanation on how to make some of the dishes after we asked how they managed to make such delicious flavors. Each dish highlighted the main ingredient through a clear base of french style cooking, enhanced by inspiration from other cuisines.

The flavors were enhanced by the wine pairings, so it is recommended to get the wine pairings or ask for advice from the sommelier.

There are options for wine pairings (full glass or half glass) or non-alcoholic pairings per glass. The non-alcoholic pairings was well thought out, although it felt like drinking apple juice most of the time.

The "casual fine dining" shows in the fact that the space can be a bit noisy at times, since the tables are spaced relatively close to each other and the sound can travel across the dining room. The restaurant is also directly next to a T-intersection, meaning that sometimes car headlights shine on you through the windows if the curtains of the restaurant are not closed.

The restaurant does not seem to be very suitable for large groups, as there aren't many large tables available. There is also only 1 toilet for men and 1 toilet for women, meaning that sometimes you'll have to wait before being able to use the toilet. The toilet is fairly accessible for people with limited moving ability, as most of the restaurant is located on the same floor...

Naar vestingstad Ravenstein voor een kennismakingslunch bij de nieuwe Michelinster van 2020. Mooi gelegen in het oude centrum, parkeren kan aan de rand van het centrum. Even opletten dat je de juiste deur kiest. Binnen is het lang en smal met links de keurig ingedekte tafels en rechts de open keuken waar de koks druk bezig waren. Ik kreeg het tweetje aan het raam, prima.

Als aperitief Brut Souverain champagne van het huis Henriot die uitstekend beviel. Ernaast een hapjes kwartet. Om te starten een dikke plak zoetzure komkommer afgewerkt met dot wasabi mayonaise, haring kaviaar en gepofte quinoa, oké. Kokos makaron met crème van curry, passievrucht en plakje rode peper, lekker. Hoorn gevuld met doperwten crème waarop doperwten salade aangemaakt met munt, goede textuur. In het glas een alcohol vrije bloody mary, lekker gekruid met aangename bite.

De eerste begeleider werd keurig door de jonge sommelier gepresenteerd. Müller-Thurgau Kabinett 2020 Trocken uit de Franken, biodynamisch gemaakt door het huis Christ. Gemaakt in een soepele loepzuivere stijl met floraal aroma, subtiel prikje op de tong en een licht minerale ronde afdronk. Uit de keuken een compact gerecht in een grote schaal. Grof gesneden tartaar van Koningsbaars waarop stukjes inktvis, zoetzure venkel, dunne plakjes taggiasche olijf, zuurdesem croutons, takjes dille en verschillende bloemenblaadjes, ernaast, tomaat antiboise en dotjes aubergine crème. Een complex gerecht met verfijnde smaken, grappig dat niet één hapje hetzelfde smaakte. De elegante wijn was keurig in balans, genieten. (8)

Uit Hongarije de Somlói Juhfark 2020 van Tornai, ingetogen aroma, strak droog in de mond met spannende zuren en redelijk krachtige mineraliteit. Uit de keuken wederom een compacte presentatie in een bruine schaal. Als basis stukken asperge in zeewier boter met limoenblad olie, waarop aardappel kaantjes, sappige mosselen, oesterblad, blaadjes lamsoor, takjes van zeekraal en codium. Complexe smaakbeleving met aangename zuren en ziltige tonen die de wijn helemaal tot zijn recht deed komen, prima. (8,5)

Voor bij het hoogtepunt van de middag een Spaanse Delmoro 2021 van La Comarcal ietsje terug gekoeld geschonken, diepe kleur met paarse gloed, in de mond mooie zuren en aangename kruidigheid met een elegante afdronk. Uit de keuken een gerecht voor liefhebbers van smaak avontuur. In een saus van kokos, limoen en Tomasu sojasaus een platte cilinder rendang waarop stukjes paksoi, plakjes radijs, taugé, pinda’s en quenelle sorbet van passievrucht, ernaast twee stukken krokant gebakken zwezerik en twee quenelles puree van zoete aardappel. Wow, veel smaakbeleving met krachtig kruidentoetsen waarbij de wijn keurig overeind bleef. Toppie. (9,25)

Als dessertwijn een Manzoni Moscato Rosato Dolce 2019 van Peruzzet, fris aroma, in de mond een fijne mousse met toetsen van rijpe aardbei. Het dessert kwam in twee delen. Om te starten een soufflé van aardbeien, mooi hoog op smaak waarbij de wijn naadloos aansloot. In het cocktailglas compote van aardbeien en rabarber waarop koek crumble met gevriesdroogde aardbei en quenelle roomijs van witte chocolade, afgewerkt met merengue plaatje waarop grof gemalen roze peper. Mooie volle smaken en fijne texturen waarbij de wijn iets minder aansloot vanwege de roze peper. (8,25)

Als afsluiter een krachtige espresso met vijftal smakelijke friandises.

Bediening was zeer goed verzorgd door een gedreven team.

If you’re not a “local,” know it’s worth the journey to dine at this well-deserved Michelin badged restaurant. Every dish, from the main to the amuses, was full of flavor. I had booked the surprise menu with an overnight stay in a nearby hotel in advance. We had a wonderful time, the restaurant was atmospherically decorated, the tables were beautifully set. We were pampered from A to Z, the food was first class and all the drinks went perfectly with the dishes. There was a detailed explanation of each course, each wine or non-alcoholic drink. The evening was perfect all around. Many thanks to the team.
