Appetizer carpaccio portobello. Light, delicate and exquisite. The bellas were dressed with balsamic reduction, cashews, dried cranberries, and parmesan cheese on a bed of arugula. Delicious!
Main course, Entraña Steak medium with fried yuca (cassave) with garlic-mojo aioli. Steak grilled to perfection, juicy and tender. This region is known for cattle, offering the best meat of the country. Note: steak comes buried under a bed of sweet caramelized red onions that was amaizingly tasty. However, some steak puritans may not appreciated. In my personal opinion, a good and interesting combination.

While the salmon itself was competently grilled, the sweetness of the strawberry sauce overwhelmed the natural richness of the fish. The sauce lacked the acidity or subtlety needed to complement the salmon, turning what could have been an innovative pairing into a discordant combination. The addition of sweet rice only compounded the problem, leaving the entire dish feeling cloying and unbalanced.
This dish seems to lack a clear identity: is it a dessert, a main course, or an unfortunate hybrid? A more appropriate approach might have been to introduce a savory or acidic element—perhaps a tangy balsamic reduction with a hint of strawberry or a spiced rice accompaniment. Without such thoughtful adjustments, the flavors simply don’t harmonize.
In its current form, this dish feels less like a cohesive culinary vision and more like a misguided attempt at novelty. Creativity is always welcome in the kitchen, but it must be grounded in balance...
