Restaurante La Confianza — Restaurant in Panamá Oeste

Been coming here for decades. Today, I had my five favorite items - the spaghetti, chicken, ohaldra, potato salad and milk peach juice. Amazingly, this single place makes those five items better than any other fonda.

I always eat spaghetti at every fonda and this place makes it best. The chicken, whether it be stewed or fried, is fantastic. Nowadays, ohaldras are not like they were a few decades ago. But this place makes them as close to classic form and I am grateful. The milk peach juice is made with huge chunks of peaches. I can't think of any other place that does that. Finally, the potato salad is impressive.

One thing I must note is that food at a fonda made by a great cook is different compared to the same food made by a chef. True fonda food is made by cooks which gives it a certain taste. A chef would likely elevate that but I, personally, would not consider the taste to be authentic. This place is authentic like fonda food from childhood.

La comida ni buena ni mala. Término medio. Una cosa buena y otra cosa no tanto. Macarrones los deje al probarlos; la chicha de naranja bien. Yo creo que son cocineros empíricos que perdieron el olfato. Baños horribles. No tienen para el público, lo mandan al baño de la gasolinera de al lado. Estacionamiento feos.
