Ensaladang Filipina: I liked the combination of flavours although I was avoiding the dried fish but when I accidentally ate thr dried fish, I wanted more. I was afraid it was going to be salty but it’s not salty at all!! And it was cooked to perfection! No chewiness just pure crunch! I think the salad coud ve better if the pineapple was fresh skinless ponkan because the salad lacked that acidity. And if the dressing was simmered for a bit before adding the honey maybe it will have that deep and sweet soy flavour. Can’t stress enough how I loved the unique combination!! And the kesong puti was like eating tofu! It added texture and depth in every bite!!
Tokwa’t Baboy Sisig: This may be my favorite sisig. Again it is not salty, and the quality of the tofu is reminescent to those I have tried in Vietnam. It has that spongy, silky texture. I loved that the crispy pork belly is so juicy. It’s not oily, everything was juicy. I forgot to juice the calamansi which I love on sisig or tokwa’t baboy but the dish surprisingly tasted great even without calamansi. That’s how good the dish was.
Sinigang na hipon sa calamansi: The soup… I am speechless! The shrimp was perfectly cooked!
Turon con Latik: you should end with this! After all the food trip, I was already full but this dessert is unique! Again I am impressed! The addition of latik, I have never tried that before.
