Ramen Hitoyoshi (The Seletar Mall) — Restaurant in Singapore

I know this restaurant is permanently closed and a new ramen spot has taken over, but this applies to both stores. Food is probably frozen, I've asked them to take out the vegetables all the time but yet there are always a little bit there. It's as if the full entire bowl of ramen is just frozen. (Only for new restaurant) Soup was... bubbly? It literally had white bubbles inside and it stayed there for around 10 minutes. I'm writing this review with food poisoning. I just ate it yesterday. Coincidence? Many flies around. I live right beside woodleigh mall and ate at multiple of the restaurants. So far, this has the most amount of flies. There are other reviews saying there are maggots inside the food but I won't talk about that. Noodles are not ramen noodles. They are basically undercooked, flavourless udon. It was just hard, and did not match the images... Completely different noodles. Meat is ok, egg could be a little more hot. Side dishes were not bad too, but star of the show was the ice lemon tea. Price, price and price. Ramen. Ice lemon tea. Side dish. Set meal costed 24$. Please state the price WITH Gst. when I click confirm. Brought 50$, went back home with 10. I've got no clue how it became over 30$ when I paid.

Despite their namesake, this restaurant also serve a number of delicious rice bowls. I had the teriyaki salmon don and loved it! The salmon was fresh and nicely done, onsen egg was soft, teriyaki sauce was thick yet not overly sweet, provided a well-balanced umami when mixed with the rice.

The restaurant isn't very big, but seats are well spaced apart. There's queue during peak dinner hours, however it moves rather quickly as food is served fast. They offer free beansprouts and corn side dishes which are cling-wrapped, so it's hygienic.

If you're here for their famous ramen, you can choose the thickness and hardness of your noodles. The broth is made using pork bones which most of my friends love. Wish they had non-pork broth options tho.

Free warm/cold plain water is available. Note that their cold green tea comes in tin can and not refillable.

[Update 24 Aug] The beansprouts and corn are now back to self-serve...

I asked the aunty to give me more sauce but she did not tell the chef to add more sauce, only when it was finished she tell and didn't do anything and just served to me thinking I don't know it has lesser sauce I literally worked here before she came. pls fire this old lady as her attitude for work is terrible. black face to customer? might as well don't work f&b, no wonder business is bad here it's because of her chasing away customers. 18:10 5 May 2025. she clearly only works outside and never in the kitchen as she does even try to make her voice louder when trying to talk to the chef, literally is not chef ear cannot hear it's that inside kitchen appliances are loud. she literally mumbled to herself that the Cher got ear problem. pls get her out. 2nd pic: when I ask for more sauce I'll still have sauce until the end this...
