This brewery is an unfortunate reminder of why I have lost interest in Korea's makgeolli industry.

They will tell you a wonderful story about the pride and dedication of the generations of people in the village who have made makgeolli here. They will tell you about the simple purity of their makgeolli, and how it is made from just nuruk, rice and water. In this respect, the brewery is a great place to visit.

Unfortunately, when you drink the makgeolli, you will discover that, like most other makgeolli, it is actually tainted with a large amount of aspartame. And so, rather than tasting the beauty of the natural ingredients, you primarily taste the chemical flavour of artificial sweetener. In this respect, I think it is a complete betrayal of what this brewery claims to value.

Here is my suggestion. Why not innovate to enhance the drinking experience while respecting tradition? For example, try selling makgeolli with a small packet of honey attached. That way, fermentation in the bottle will not continue, and customers can add delicious and traditional sweetness to their makgeolli according to their...
