Just wow!! In sleepy, remote, picturesque Guaso you find one of the most vibrant, progressive, and quintessentially unique places out there with La Tarara! To call it a restaurant is to sell it short, it's a phenomenon! Amazingly crafted vegetarian and vegan food, that is sophisticated, delicious and unpretentious. Moreover, the staff are absolutely lovely - this is a thoroughgoing community and cultural project, hence everyone cares profoundly about what they are doing.

The produce is 100%locally sourced, and the proprietors' philosophy is to work in step and sustainably with the seasonal agricultural bounty. Consequently, the offerings depend on the time of year, meaning you'll want to visit a few times!

The restaurant is simultaneously a live music events venue and so it seamlessly mixes good food, good wine, great spirit, and wonderful music. The band's they have are absolutely brilliant. I witnessed an excellent Jazz evening, followed by a glowing Cumbia band the following day (yes! I had to go back!!) You less 'attend' La Tarara, than you do 'experience' it. It is Sui Generis.

What they do here is very special, and they do it in one of the most beautiful settings you can imagine. It's a life affirming project - the whole thing is a labour of love, and a passionate expression of what I consider important: good food, good community, and putting people before 'brand'.

It's absolutely refreshing to see and you'll absolutely love it! I did!

On Sunday 12 June 2022 my husband and I returned to La Tarara for a second time during our stay in Aragon for lunch. Unlike the first time we ate there this time after more than 15 minutes of being ignored by the hospitality staff working the patio and passing by us 4 times between the patio and the restaurant there was no acknowledgement on her part of our presence on the patio. She spent a good deal of time welcoming the couple who arrived shortly before us, she hugged, kissed and chatted with "friends" at another table. She went back and forth 4 times and didn't nod or say "I will be right back" as she walked right passed us. NADA. As we waited yet another several minutes for her to reappear from the restaurant we realized that we certainly weren't going to receive any satisfactory expressions of hospitality today. No menu, no question about what we would like to drink (a standard quick question by Spanish hospitality staff welcoming a new guest). We were invisible as she walked straight passed us 4 times. We (small rainbow family with 2 small children and two dogs) came here on our caravan trip because the spanish cuisine is very meat heavy and we are all vegetarians. We were promised a nice meal and a great view. It turned out to be one of the best restaurant visits of our lives! La Tarara is no tourism cash machine, la Tarara is a place with heart and soul! Maite (the owner) is super friendly and funny, the food is DELICIOUS and the service is excellent! We love the fact that everything is seasonal and locally sourced. It is incredibly tasty, the portion size is big enough (even for a breatfeeding person ;-)) and the range of flavors is wide. The establishment is beautiful and the view is really impressive. The price is very resonable, too. We had 5 courses (tasting menue) and dessert, 2 beers and 2 glasses of wine and paid a little over 60 €. If we could give 6 stars, we would. Es un restaurante pequeño, familiar diría yo, situado en el Pirineo oscense en el municipio de Guaso. No cuenta con carta, son platos degustación para facilitar trabajar con productos de temporada, y lo más importante, ecológicos y de agricultores de proximidad. Productos de gran calidad sin olvidar, como cuando te explican los platos, que esto se hace para no despifalrrar alimentos teniendo que tirar comida. El equipo humano del restaurante es excepcional: joven, activo, simpáticas (ya que todas son mujeres), se preocupan por si necesitas algo, eficientes y totalmente válidas e independientes en su puesto. Maite, la dueña y cocinera de La Tarara, es una auténtica malabarista de los sabores. Mezcla diferentes productos sin que pierda ninguno. Muerdes algo dulce y de repente aparece un matiz de albahaca, tras él escondido otro salado y no <<discuten>> entre ellos. El primer plato que llegó a la mesa fue unas judías pintas con una espuma cítrica, cebolla picada y bien macerada con flores de lavanda. El segundo era un Cebiche de Shiitake con mango y aguacate marinado en cítricos y leche de tigre casera. El tercero, a estas alturas ya no me acuerdo bien, pero era una crema de zanahoria/calabaza y una reducción de coñac (creo recordar) sobre setas Shiitake, avellanas y granos de granada con zanahorias. El cuarto una calabacita rellena de arroz prohibido con cebolla, salteado de boniato, tomatito cherry, col lombarda y nuez de macadamia. De postre un Brownie de chocolate vegano con arándanos, y helado de mango. Hasta aquí los nombres de los platos, porque cada uno de ellos contaba con bastantes ingredientes los cuales no desentonaban entre sí. De beber pedí el sustituto del famoso refresco de cola, la marca es <<Palestine COLA>>. Para los amantes del famoso refresco, invitarles a que prueben el sustituto; es una auténtica pasada el sabor que tiene. No es un sabor extraño con ínfulas de acabar con el otro, sencillamente es una verdadera delicia de este tipo de bebidas. En definitiva, comer en La Tarara es un auténtico festival de sabores. Si vuelvo a Aínsa, que eso espero, repito seguro en La Tarara.

A real gem! We found this place while looking to have lunch in the area and were immediately delighted by the kind owner who is passionate about the food and mission of her restaurant. Food is offered as a tasting menu using local and seasonal ingredients with the owner explaining each course in depth. Each course was made-then and so flavorful and delicious. In addition, the owner is a lovely host who adds a personal touch in her chats and has such an interesting background. Situated in a beautiful village with great views, it’s a meal you won’t regret! We will definitely return.
