What an unforgettable experience! My partner and I visited Es Garum in early November during a late-season spa holiday. As vegans, we weren't sure what to expect, but when we made the booking through our hotel, Cas Comte, we were assured that our dietary preferences would be fully catered to.
Upon arrival, we were warmly greeted by Chef David himself, who was working front-of-house during the quieter season. His hospitality was outstanding—friendly, attentive, and genuinely welcoming. We didn’t even need to look at a menu; David had personally curated a special 5-6 course meal for us and was happy to recommend wines that complemented the dishes perfectly.
For a non-vegan restaurant in a small town in rural Mallorca, the food was absolutely exceptional. From the grilled mushroom dish to the velvety soup, the fresh bread with oils, and the flavorful ramen—each course exceeded our expectations. David's personal touch throughout the evening made it feel like a truly unique experience, which is so rare to find.
We were so impressed that we booked directly with David to return later in the week for a Vegan Paella. Once again, the meal was outstanding, and the experience was just as memorable as the first.
We cannot recommend David and Es Garum enough. It’s a true gem, and we’re already looking forward to...
Read moreI rarely write reviews, and if I do so, it is for extraordinarily pleasant or extraordinarily unpleasant experiences. I had the tasting menu as a guest of the nearby hotel. The tasting menus are a concept you can find all over the island, in better or worse quality. For example, I always enjoy the quality in the restaurant of Joan Marc in Inca, with fresh local ingredients and mastery of preparation. Or "simple" food as the excellent frito mallorquín or lamb shoulder in the Celler Can Lau in Inca. Here, unfortunately, the only pleasant thing was the ambition of the food description and the really nice, quick, and attentive service. I could not enjoy even one of the courses. What botheted me was the total lack of a balaced tasting. Even the maroon soup was watery, tasted more of potatoes, and had too much olive oil in it, and that is definitely a dish very hard to spoil. The fish was too salty to eat it, the vegetables accompanying were too smokey and so on. I am perplexed and puzzled about the excellent reviews. Usually, I tend to share the overall rating. I also see that the single negative reviews are commented rudely by the owner, maybe thus preventing people from sharing their experience. For me, it was the worst experience during the last years, as I always pick restaurants...

Every once in a rare while, you step into a restaurant that doesn’t just serve food—it tells a story. And not just any story. A deeply personal, imaginative, and unforgettable one.
Es Garum, nestled quietly in the heart of Lloseta, is one such place. It’s not loud. It doesn’t flaunt itself. It doesn’t need to. Because what happens inside its walls—thanks to the extraordinary vision of Chef David—is nothing short of magic.
There was one moment—somewhere between a deceptively simple broth and a piece of fish that seemed to melt into a dream—where I sat back and felt. Not just full. Not just impressed. Moved. The kind of feeling food rarely gives you unless it’s made with true soul.
Chef David brings the spirit of the island to life with a kind of culinary poetry that’s rare in any corner of the world. His cuisine doesn’t scream to be noticed—it invites you in, gently, and then astonishes you with its honesty, its courage, and its beauty.
Dining at Es Garum isn’t a visit. It’s a journey. A quiet masterpiece. An emotional crescendo on a plate.
Thank you, Chef David, for reminding us what...
