I waited several weeks to let the meal my family enjoyed set in. Wow. What an incredible dining and gastronomic experience. Four hours long - small amounts of artistic, creative dishes that delighted the senses. We had a group of five and ordered the Tasting menu with three having wine (we had driven from Madrid and need to be safe for the return). The restaurant has a beautiful setting in the same building as the winery, but on the top level. The view looking west is spectacular - rows and rows of vines and a nice view of the nearby castle. The fog had started to lift when we arrived at 1pm which made for many beautiful pictures. The staff greeted us warmly and attended to all our needs. They were very attentive and helpful, without being intrusive. Each course was unique in its design, preparation, and flavor. As with any lengthy, multi course meal, there will almost always be something that one does not care for - and that was true for each of us at the table, but not for any one specific dish. Our two early twenty year old sons were amazed and very happy to try each dish. Oh, the wines too! My wife did the international and found for a couple that she preferred the wine from Carraovejas that I was enjoying. They happily switched her glass as needed. Each wine paired perfectly with the dish being served. Our family found our time in Spain to be transformative - everywhere we visited, we found kind, fun, and helpful individuals. This restaurant has 1 Michelin star, and we had to make the reservation with about 3 to 4 months of anticipation due to its high demand and that it has maybe 5 tables. We reserved the Cellarium III Menu with the Alma Pairing, that includes all the Pago de Carraovejas wines, which are amazing. This was truly a once in a lifetime experience and every aspect of it was beyond amazing. We started the experience with a tour of their wine cellar, that included some of the best wines in the world. Then we started with an aged Iberic ham that was amazing. Then we moved to the Asian station where we tried some different presentations of tuna with an amazing sake. After that we went to our table and then we had a lot fo amazing food, each plate was better than the last, perfectly paired with a couple of wines that truly were amazing. Después de la reserva hace un mes aproximadamente hemos recibido varías llamadas para confirmar la reserva , cosa que me parece algo excesiva, ya que demuestra interés por el cliente por parte del restaurante pero aparenta desconfianza hacia uno. Ya en sala , por exceso de clientela nos vemos algo abandonados y mal ubicados ya que no hay sitio para el cóctel de bienvenida y pasamos directamente a mesa. La entrada en recepción algo cargada de clientes de "cata" con síntomas evidentes de ello. Pasando al restaurante se nota calidad y buen gusto, con buen trato y amabilidad, aunque se nota mezcla de clientela con diferentes propósitos , desde cumpleaños ( con sus típicos cánticos de celebración , hasta los más clásicos " vivan los novios" que se escuchan tras las vitrinas que separan los ambientes). El menú degustación es completo y variado , pero denoto falta de un jefe de sala que organice los servicios ya que han pasado hasta 5 personas incluido el "supuesto" por nuestra mesa sin saber cuál es la misión de cada uno. Pienso que debería dar servicio cada cual en su especialidad, sumiller, jefe de sala, camarero, etc... y no uno para todos y todos para uno. En cuanto al servicio de vino, hay que valorar la carta del restaurante, aunque veo excesivo el precio de los vinos "locales" ya que son precios exagerados con respecto a los de otras bodegas. Dentro del menú no escatiman con los vinos elementales y si con los más altos de gama a los que les cuesta pasar de la copa de degustación. Como el servicio se alarga tras el completo menú, al final no hemos encontrado a los anteriormente citados para agradecer su atención y servicio ya que han desaparecido, por lo que hemos tenido que abonar el servicio en barra a una nueva persona con la que no hemos tratado en todo el tiempo de la comida y con el justo interés por el resultado de esta.
