Great atmosphere in the Swedish woods and a lovely house. The service was excellent, and the food quality high. Apparently the dish sizes are very small, although we are used to fine dining restaurants, the dishes at Knystaforsen are especially small. We were still hungry when we left dinner (and breakfast). In general, the food is burned over open fire and has a burnt wooden smell and taste. For some dishes that is a great surprise and twist, but I really don‘t need that taste in a sweet Madeleine at breakfast. After the main courses we should go outside to watch the open fire grill where the food is prepared. We were told to go outside (zero degree temperature in February) without asking if we‘d like to. Our clothes smelled like fire even the day after. The breakfast again was little, and I missed attention to detail. We booked a pescatarian menu, and I was surprised to have meat on our breakfast plate. In addition, they don‘t serve milk alternatives. I expected to get Oatly, which is manufactured in Sweden, offered. We booked the experience including an overnight stay at Törups. This hotel is in very bad shape, the bed and everything is super old and needs maintenance. I cannot recommend staying there, and it doesn’t fit in a Michelin star...

But how do you summarise an epic 5 hour experience + breakfast?!
We celebrated our company birthday here and had an amazing time. They did everything right
From the beautiful fall scenery to the fiery smoke and lovely interior. It really felt like stepping into a unique cabin in the woods.
The menu was excellent - keeping you on your toes and not giving the little piece of paper until after fishing the course. Perfect!
The staff was wonderful, especially our sommelier and the head chef!
All courses were delicious and plated beautifully. We even started doing research on the ceramics during the course of the dinner
Drinks: there’s an adventurous option. How can you not pick that?
Rooms: the place does not have a lot of rooms so they partner with families in the area I guess. Worked out very well with a house in the middle of nowhere. This is a positive! The even drove us to and from the restaurant.
Breakfast: the journey keeps going! Morning after there’s a great breakfast with a nice view of the surrounding area during day time.

And then, the food. Precise and stunning. Moose, trout, duck, fallow deer. Birch, rosehip, beetroot, aronia. Most touched by fire, foraged or found nearby. Rooted and exceptionally refined.
It’s in this span between the fireside ease and the meticulous execution that Knystaforsen becomes non-linear. You’re not guided through the usual, calibrated fine dining arc where every element plays it safe by hitting the same expected note. Instead, it delivers something entirely different — more ambitious, meaningful, and forward-looking, shaping a novel and elevated sense of belonging.
