This review is about the restaurant. I was looking for a a very Wallis experience. Studying the menu, I felt that maybe this was almost "too modern". But I checked the reviews and saw this restaurant highly rated, and gave it a shot. And that was a lucky shot.
It clearly shows that whoever is in charge of this restaurant truly loves food and wine. I ordered a simple mixed salad for a starter, but it was a good mix of veggies and came with a dressing that was unquestionably made in-house and was very tasty – nothing like those run-of-the-mill generic dressings that one is always afraid to be served. And the bread was fresh and savory.
The main course was Sigis Schlemmertöpfchen: Rösti with cheese with both pork and beef tenderloin. The beef came done exactly as ordered, which in Switzerland is often not the case. The meat was great, but that Rösti with cheese was a dream.
I never order desserts, but this time I did, because I was going to do an ultra run the next day. I ordered a vanilla ice cream with roasted pumpkin seeds and pumpkin oil. What a combination! That really popped!!
For wines I had the white Varenheit first, then the red Varenheit, then the Longitude, and finally the Cayas. All of them were examples of convincing, well crafted, creative local wine making. The Cayas was downright substantial, a thing that can't be said about too many Swiss reds.

Dall'esterno forse non appare molto, ma locale carino, con rivestimenti di legno, in stile contemporaneo. Accolti con cortesia e subito dopo un passatempo per la bambina ! Avevamo già abbastanza in mente di mangiare Raclette, ma i menù sono piuttosto ricchi (anche una dedicata alla selvaggina), forse fin troppo. Raclette O.k., buoni anche gli spaghetti. Servizio cortese, prezzi nella media svizzera, ma accettabili. Soltanto fatico a comprendere perché una bottiglia d'acqua min. costi addirittura 9 Franchi (= quasi otto Eu.). Interessante carta dei vini, con produzioni svizzere, ma anche spagnole, ecc. (i prezzi iniziano a essere impegnativi, però !..). Parlano anche Italiano (e ovviamente pure inglese). C'eravam...
