Restaurant & Laxmanufaktur Schäfli — Restaurant in Neuheim

I came to Switzerland for a few days on business, and our group was taken to this place by a colleague. I have to say, every bit about this restaurant is amazing. The Kegelbahn downstairs was something completely new for us, since we're used to more mainstream bowling (wooden, oiled lanes, etc.). The challenge was great fun, and we were constantly refreshed with new drinks and appetizers (the salmon canapes) from the incredibly friendly owner. If you like Salmon and/or game, this place is for you! We have been going there for years in the fall to enjoy the amazing game dishes, in particular the venisson. It comes with generous servings and delicious sides of spätzle, poached pears and veggies. They also smoke salmon themselves and have a fantastic selection on the menu which is worth a try (if you can't make it there, there is a foodtruc with similar salmon products going around the Canton). Für‘s Schäfli mit Gaby und Roger müsste Google einen 6. Stern einführen. Die Lachsvariation als Vorspeise und das Reh-Geschnetzeltes mit den fantastischen Beilagen waren einmal mehr einfach göttlich (finde gerade keinen treffenderen Ausdruck). Schwer zu sagen, welcher Lachs nun der beste ist, mein Favorit mit kleinem Vorsprung ist der warm geräucherte. Beim Wildteller stimmt einfach alles: Begonnen mit dem zarten Fleisch, begleitet von einer ausgewogenen Wildsauce, feine Rosenköhli, super Rotkraut mit der perfekten süss-sauren Balance und traumhaften karamellisierten Marroni und – last but not least – absolut Weltklasse-Spätzli (es sind und bleiben die besten, die ich je in meinem Leben gegessen habe), einfach fantastisch.
