We enjoyed a dinner at Vivanda during our weekend stay at the In Lain. The restaurant features 10 tables total, and provides a fairly private feel, with the cozy ambiance dominated by wood and warm tones. While we visited in the summer, I can imagine that the scenic backdrop of snowy mountains together with the fireplace provide for an even more special experience in the winter.
The 8-course menu is one of the most visually stunning creations I’ve had at a Michelin-starred restaurant. The attention to detail was immaculate, with vibrant colours and intricate composition. Taste wise, quality and character of the ingredients were the driving theme, standing out in every dish. I particularly enjoyed the fabulous scallop sashimi, as well as the colourful radish soup. The mango-based dessert with balsamic pearls featured a smoky note that I found overpowering and too reminiscent of the trout dish served a couple of courses before; this was probably my least favourite part of the menu, though the subsequent take on cheese cake with rhubarb made amends.
