There are two places I would get out of Bangkok for for a one-day food trip. Here and one river prawn place in Ayutthaya. Pa Wan just have the best Pad Thai, hands down. No place in Bangkok I've tried ever come close to this.
And although I wished they used the Sen Chan flat noodles, their Pad Thai is so flavorful I can't even complain about the noodles.
