We ate at Brine in June 2025 while it was relatively new. Space and attention were abundant. Tantalizing in aroma, appearance, palate, and texture, the flavors reflected the locale, tasted superb, paired well, and were presented with world-class artistry. Both the food and service exceeded Michelin one-star restaurants I've had elsewhere. Ambiance was Island-luxury made cozy by the catering service and accompanied by beautiful sunset views. They catered well to my children, offering age-specific options. I had the fortuitous experience of having the manager take on role of sommelier, while the sommelier was off for a few days. We tasted about a half-dozen wines, exploring flavor notes of some of his own favorites, some from places unexpected. It was refreshing to be able to absorb some of the passion and expertise from this most-hospitable host. Later, 1 or 2 of the designing chefs also came by the table for greetings and introductions, enthusiastic about feedback on their creations, wanting to ensure everything was thoroughly enjoyed.
