This company markets some of their bread as sourdough but it’s fake sourdough. Similar to supermarkets, they add in a small amount of sourdough starter (so they can justify calling it sourdough) but rely mainly on adding yeast for a fast rise. Real sourdough need proofing for 24-48 hours which gives it the distinctive tangy taste and makes it more digestible for people with gut issues. Sadly local business lap up the ‘artisan bread’ branding and market it on as sourdough themselves for their £15 brunches (It’s likely sold cheaper than real sourdough).
