Wow, I am thoroughly impressed. I am a cook and have studied and trained in a lot of culinary techniques. I am also a very hard to please eater who can find fault in everything.
I had a 4 course meal here (appetizer, soup, entree, dessert) and everything was perfection. I wasn't planning on having such a large meal but because I was impressed from the beginning with the appetizer, it slowly became a longer and longer meal.
I have been to many restaurants from cheap to expensive and overpriced to worthless. There's only one other time I've been impressed with every single dish I had and that was 8 years ago.
As a cook, I know exactly what are the indicators that show a well made meal. While the gestalt of the food was great, what truly impressed me were the fine details that the regular person would never notice.
Take for example, rice. Most people would not even glance a second time at the plain white rce. Rice can be a very difficult dish to cook correctly and even though it was the most basic item underneath the amazing slab of white King Salmon covered in a beurre blanc sauce, the rice was amazing.
Every individual grain of rice could be tasted and it was cooked through while not being dried out or mushy in a pile of goo.
The small strands of julienne carrots were tender and crisp and complemented the shapely salad and Caesar dressing like a harmony of musical instruments.
Even the bread that is served before the appetizer was fresh smelling, soft on the inside, and crunchy on the outside without being aggressively so. Since I had bread, I guess this would be a 5 course meal then, eh?
Compared to some prices I've seen and experienced in Miami, this is a very good deal. Chef Blanco here is a much better cook than me. I am only smart enough to see perfection and occasionally get it right on my own once in awhile.
He deserves all the praise and indeed the price for these...
Read moreWe stayed in Sitka for five nights and ate out every night. Hands down the Channel Club restaurant was the best. I had the best salmon dinner I’ve ever had in my life and I eat a lot of salmon. The desert was to die for and our server was a delight. Everything is top notch, and well worth every penny. I wish we were staying longer just so I could go back there and have another meal. Some other restaurants were recommended, but none of them came close in comparison even long-standing”fine” restaurants. don’t mess this restaurant. I think the new owner should write a cookbook...
Read moreThis place offers a great view of the water. Definetly request a table in advance if that's part of your visit. Small menu with no frills steak and fish dishes. The appetizers are a bit of a shining spot on the menu. Gluten free options. The wine list was disappointing. I know through Covid cuts have to be made, but buying a $10 bottle of wine from the liquor store here for 4 timed that was tough. The staff seem to be all local, so that's a nice touch compared to more seasonal staff elsewhere. Great service. I hope they continue well into the future. I will visit this...
