El Tapatio NW Taco Truck — Restaurant in Bellingham

I grew up in Texas and Colorado and only moved to Bellingham about a decade ago. I feel like I am fairly particular about what a good taco-truck experience ought to be, and for many, many years El Tapatio has exemplified that: really good food, made quickly, and not costing an arm & a leg. So I'm definitely recommending it. Why only four stars, then? Because it can be unreliable, shall we say. If you get to the truck during lunch time on a work day, you can expect very good food; you may have to wait for a bit, but they clearly have their #1 cooks at work during that time. This restaurant uses cabbage as their greens base in their burritos and I could not get more behind it. Holding up to burrito fillings heat, retaining wonderful crunch and backing up the long slow cooked flavors paired with the expert experience, they carry a lovely pickled flavor and enrich alongside the deep and rich tender slow cooked and pulled meats. Nicely seared tortilla makes this a no brainier, enjoy some food from a wonderful independent food truck. My "Supreme" vegetarian burrito was AWFUL. It was supposed to come with rice, beans, avocado, cabbage, red pepper, lettuce, onions.

There were THREE BEANS in the entire thing. There were TWO SMALL PIECES OF AVOCADO. There were NO RED PEPPERS!!!!! It was mostly rice, nasty wilted lettuce, and tomatoes.
