Decided to head out to Paul's Bar in Delaware to check out Sweet Cheeks BBQ Food Truck. Met the owners Wendy/Paul. They smoke their meats with cherry and hickory wood. I ordered meats with no buns. They had pork belly, brisket and pulled pork. I also ordered Smoked Mac n cheese, Smoked Cream Corn and Coleslaw. The Coleslaw was sort of like a KFC , finely chopped with the dressing having a slight bite to it. The corn tastes super fresh and was creamy sauce with sliced jalapeño in it. It was super tasty. The Mac n cheese was a homemade version that I believe had 4 cheeses in it. Yummy!! On to the meats. The Brisket was a chopped version which was super moist which is super unusual. It had a ton of flavor to it. The Pulled Pork was also very moist and flavorful. But the star of the show for me were the Pork Belly slices which were perfect, great flavor and texture. I could have ordered a whole bunch more of the meats. For only doing this for a year and only on weekends, they have a very bright future I think. Check them out on StreetFoodFinder.com.
