After 3 visits here on confident to share my experience. I think diavola is quite a bit overrated. I know geyserville really just has 3 dinner options with diavola being the most popular. Our most recent dinner experience solidified why I think this place is overrated. First, if you go wine tasting anywhere in the area, it seems everyone always pushes you towards diavola for dinner talking about how amazing it is. The first two times we thought it was just okay but we thought "dang everyone talks so highly about it, did we just not order the right thing?" So this time we decided to get what everyone suggests everytime we hear about this place. For dinner we ordered the highest rated pasta dish, the Sweet Potato Gnocchi with Dungeness Crab, Scallops, Kale, Basil, Meyer Lemon, Chestnuts, Leeks, Persimmons & Ricotta di Bufala. Yeah that was very underwhelming, very bland and way under seasoned. We actually had to request salt to liven it up, this was the first time I actually added salt to a meal at a restaurant in at least 3 years. The scallops were cooked well, it appeared there was three scallops, but it was actually 2.5. one was slice in half with I thought was weird and for a $26 pasta dish, I would never order this dish again.
For the first pizza dish we ordered the Dictator Pizza with Marinated Short Rib, Garlic, Mozzarella, Scallions, Serrano Chiles, Kimchi, Kewpie Mayo & Shichimi.
The "short rib" was actually a short bulgogi, it was overly sauced and made the pizza mushy and overly mayoney if that's a word. Anyway you would have a slice but definitely not take a second. It was a weird experience in pizza and nothing I would ever recommend.
The second pizza we ordered was the Boscaiolo which had Sausage, Mushrooms, House Smoked Pork Belly, Peppers, Greens & Creamed Onions. This pizza also had major pizza flop and was really just boring and nothing to write home about. All the ingredients made it sound like it would be amazing but it was just average.
I think after the several experiences here I can conclude for us at least, the ingredients and the dishes all SOUND amazing, but when you are eating them, they are just boring, underseasoned and kinda failed experiments. The restaurant Diavola usually has a full house within a few minutes after it opens, making it one of the most popular venues within a fair distance from where it is located. The crowds are drawn in by the pizzas, such as the one with smoked pig belly, goat cheese, and scallions, or the one with a signature mix of spicy meatballs, red peppers, provolone, pine nuts, and raisins. Salumi, lardo, and olives that have been cured are some of the best home components that may be used. Despite this, the quality of their pastas, such as the linguine that is topped with baby octopus, bone marrow, zucchini, and bottarga, should not be affected in any way by the fact that they use fresh ingredients. This restaurant's chocolate pistachio semifreddo and Blue Bottle espresso are a great way to round up the meal.
We have been here a number of times in the past since it was recommended to us by a number of our other friends who are originally from Italy. On a Saturday, we made the spontaneous decision to stop in for some pizza, and as luck would have it, there was a table right away that was accessible for us to occupy. OGM! We had the following: Heirloom tomato salad with tomato vinaigrette, it was super fresh, the tomatoes were perfectly ripe not at all mushy and I could have drank the vinaigrette alone. I almost saved my salad plate with dressing so I could dip my pizza crust in it. Salciccia pizza, the crust was perfect with just a little char, the cheese to crust ratio was good and the sausage was delicious. All in all a really good Neopolitan style pizza. Potato gnocchi w pesto, I love gnocchi but my partner was skeptical of it at first because it had romano beans and kale in it which he usually isn't a fan of, but he ended up loving it as much, if not more than me. The gnocchi was cooked well, the pesto was super creamy and flavorful and the veggies gave it nice variation. I'll be adding veggies like this to my gnocchi at home now. Since this is during Covid, only the outdoor patio was available for dining, and it didn't disappoint! The patio is spaced appropriately and thoughtfully decorated with string lights and plants. We basically had a private dining area in the very back of the patio, it was awesome.
