A Heavenly BBQ Oasis Amidst the Rain – Big T BBQ in Centralia, WA
As our car meandered through the rain-soaked streets of Centralia, WA, a heavenly aroma of smoked meats, beckoned us to a BBQ haven on a surprisingly open Sunday evening. The universe must have been conspiring to bring us to Big T BBQ, where we discovered an unforgettable dining experience, even in the midst of a downpour.
With the outdoor seating drenched and indoor dining unavailable, we opted to transform our car into a makeshift dining room. Little did we know, this would become a memorable and finger-licking-good feast. Big T BBQ, you had us at the Barbecue Sampler.
Every bite of that juicy brisket, tender meatloaf, and succulent pork ignited our taste buds, leaving us craving for more. Paired with crispy fries and a refreshing drink, we were in BBQ paradise. Our only regret? Not having enough room in our stomachs to try everything on the menu.
The pièce de résistance was the cheeky sign facing the street that read, "Smoke Meat, Not Meth." This delightful humor added a touch of charm and personality to Big T BBQ, only further endearing it to our hearts.
Needless to say, we're already planning our next pilgrimage to this culinary temple of smoky goodness. And when life calls for a special celebration, we won't hesitate to enlist Big T BBQ for some mouthwatering catering.

I however am on huge on BBQ and have been on a quest for many, many years to find a local bbq place that I could grab when I have the craving, but at that moment don't have the countless hours it takes to cook. I got the smoked platter, with samples of meatloaf, pork and brisket. While the meat was incredibly tender and very hot, but unfortunately the majority of the flavor came from the bbq sauce that was placed on top of the meat after it was already plated. I am not sure if it is a house sauce or not, but my philosophy is, of the meat is cooked and properly seasoned, you don't need sauce. Unfortunately once I got home I ended up scraping off majority the meat off that had the sauce on it (which was a good amount) and picked through the rest. It was my birthday and I was very excited to try the Brisket so I had been thinking about it all day. I thought it might be risky waiting until the evening, knowing most bbq places that are good, the brisket is likely gone towards the end of my the day. Showed up 30-60 mins before close a Sunday night. Ordered the ultimate Brisket sandwich. I'm not sure if this is normal, but I got a pulled brisket sandwich, covered in sweet bbq with a sad squashed sesame seed bun. This is the opposite of what a brisket sandwich should be.
