My only disappointment was that José was not working and I was not able to meet the gracious host who took my reservation. In a brief conversation he made an impression. Nate the restaurant manager did well in his place. The dinning room doesn't make you think of a French restaurant, but your palette will soon after. The star of this show was our server Michellina. She set the tone for the evening. Michellina exuded such spirit that we knew we were in good hands. she was just a delight to converse with, confirming that meeting José would have been a treat. Michellina started us off on a sampling of wine. We tried our own, then each other's. I opted for my wife's choice and she opted for sample. My wife ordered the apple and cherries salad. Eating what she could, she turned it over to me, after I went through what was perhaps the best French onion soup ever. I loved the salad it had a hint of fennel which brought out the freshness and flavors. We then shared the Crab omelet with the caviar of course. Garnished with an herb salad that included fennel. The wife not a fennel, it was another treat for me. The entrees were following two grand courses with a lot to live up to. My wife had the sole paupiettes, which I didn't sample. Thin layers of fillet wrapped around crab and spinach and accompanied by a tomato saffron broth. She enjoyed it immensely. I had the grilled lamb loin. It had an onion soubise, harissa scented sweet potatoes and romanesco with a hint of what I thought was cinnamon but whatever it was made it sweet. The lamb was a perfect color and taste. Perhaps the second best lamb dish I've ever had. My wife uncharacteristically declined dessert. I couldn't dine in a French restaurant without having a sweet treat. A chocolate mouse with passion fruit, milk chocolate, macaron almonds and carmel. I foolishly topped it off with an espresso martini which wired me immediately and kept me up half the night. Once I found out it was a prixe fixe menu, I was hesitant; I knew the restaurant had only been open for two months and wondered if it was going to be well put together. I am compelled to write this review just one day later because our experience at Regent was OUTSTANDING. The restaurant operated as if it had been in business for decades. The food came out in courses that were perfectly timed - not too fast, not to slow. The people serving the food were skilled and proud to serve it. They seemed to love where they work. The food? All I can say is, it was the best meal we have had in a very long time - not just in Saratoga Springs - but ANYWHERE. And we travel a lot and we love to eat! The Chateaubriand was insanely amazing. Just so perfectly prepared. There were two sauces accompanying the beef - both were equally complementary. The main course was served with delicious root vegetables and a side dish of piped, crispy browned potatoes. I'd say they were "mashed" but that would not do them justice. Lastly, I hesitate to add this last bit because I hope it doesn't compell the management to make a change: we could not believe the price. Our evening started with the waiter accidentally spilling water on my napkin before I had even picked it up. It left a large puddle, and he didn’t clean it up—I had to ask for a new napkin myself. My salad was extremely bitter, and after having three people taste it, we all agreed it was unpleasant. When I ordered a specific beer, the wrong one was brought, and instead of correcting the mistake, the waiter asked if it was “okay as is.”
The mussels included a cracked shell, which left fragments in the dish and caused me to spit out sharp pieces—a major turnoff. The fries were bland and soggy, lacking the crispness and flavor you’d expect. Overall, the food felt like an attempt to be upscale and distinctly French, but it didn’t deliver on quality.
We’ve dined around the world, and unfortunately, this experience didn’t meet expectations, especially given the premium price point. The atmosphere felt more stiff and stoic than inviting, and we genuinely miss the warmth and character that Longfellows once had in this space. Also, the strict no-substitutions policy on $50+ entrées felt unnecessarily rigid and out of touch.
