Blue agave Mexican kitchen — Restaurant in Colorado City

Went last Saturday with good friends, and OMGoodness...we were so surprised that not only was it truly authentic Mexican food but everything we ordered was amazing and flavor packed! I had the combo of shredded carnitas taco with shredded beef enchilada which comes with rice and beans, we also ordered the carne asada fries, the super burrito with carnitas, chips & salsa and guacamole and chips with flan for dessert.....as mentioned before everything was so yummy!!The owners took the time to say hello, they are so friendly and down to earth, we felt right at home. Thank you for your hospitality and amazing food! We live in La Verkin and can drive to St George or Cedar City in the same amount of time it took to get to this restaurant....NO CONTEST....where we'll be driving to over and over again will be to Blue Agave in...

I live in a major city with great Mexican food, so this is not the best Mexican food I’ve ever had, but I do think it’s the best Mexican food in this area of the country (Southern Utah / Northern Arizona). I’m giving them 5 stars for that reason. The chips and salsa were among the best I’ve had though. My burrito and enchiladas were also very good. My only complaint is that I’m vegetarian and the mixed veggie protein option was not great. I’m pretty sure it comes from a bag of frozen veggies. We had the best meal here! Our server was prompt and so welcoming. We stopped by during a vacation after a long day on the road and outside, and the food we had was just what we needed afterward. I had the chimichanga with shredded chicken, and it was excellent. We also shared the Asada fries, and the barbacoa on top was so tasty! We were especially fond of the salsas, they are not to be missed. The portions were plentiful, and everything came out quickly.
