De Lunas Taqueria & Panaderia — Restaurant in Colorado

This place has the bones, atmosphere and knowledge to be a great place to eat! Unfortunately, during rush lunch hour on Wednesday, July 26 2023, only having one (amazing) lady doing all the order taking, cooking and serving, the end product was not as it should have been. I'm sure the dry and chewy proteins of their food is most likely due to lack of kitchen staff that would be responsible for the lengue, beef and chicken orders.. ALL OF THEM..to be overcooked, dry and chewy. Such a shame! I really want to LOVE this place.... but I believe they need more help to keep track of their orders. .... that poor lady was running ragged, and was still not able to keep up with the pace of putting out so much food. Not her fault.... it’s MANAGEMENT'S fault!!!! Next time I'll poke my head in the door and look over the counter to see if this restaurant kitchen is adequately staffed.... or go across the street where I always consistently get decent food. I still believe De Lunas would easily win a contest between them and the restaurant across the street.... IF.... if De Lunas was...

I love true authentic Mexican food. That's this place. I don't live anywhere near this place but my vet is close, so now I can't wait for my pet to get sick. It's small, I think I only saw a few tables inside but that's because they have a full bakery inside. Empanadas, cookies, cake, and all kinds of candys. The tacos and tortas were above average. The meat in some of the tacos were dry but the salsa was good. The green salad were better than the red but that is purely one person's choice.
