This was one of the best food trucks I’ve ever been to. Located fairly close to the airport, my family of 6 wanted to grab something quick to eat on our way up to Estes Park on a Saturday around 1230p (btw, at the time of this review, Google incorrectly has them closed at noon, but that certainly wasn’t the case).
What was meant to be a cheap bite turned into a memorable highlight of our trip.
They brought their A game for everything you expect at an actual restaurant, but without the fuss and money-draining characteristics of one. The attentive service had the quality of a fine-dining restaurant. The proprietor was so warm and friendly, not only to my family, but to every customer, like they were his own family and friend. Although they give you a device/beeper to let you know when your food is ready, he often brought out the food himself for his customers (as well as a couple different delicious salsa/cremas)
What separates it even further from other food trucks are the extra touches of complimentary spizazz. The owner provided free bottled water to us. Also, there is are free fruited drinks on the side of the truck available to paying customers! (I believe it was hibiscus and pineapple?). So refreshing.
There is also a small tent with a few tables if you want to sit down and eat.
Now the food. Fantastic. Came for the street tacos , but clamored for more quesadilla by the end. The tacos were amazing (like others have mentioned). The beef tongue (Lengua) was well seasoned and tender. The plates also came cilantro, lime, onion, and a grilled jalapeño. The provided sauces are the BEST (don’t skip them).
And the QUESADILLAS. The surprise hit of the day. More expensive, but Worth every penny. My brothers and I ended up getting another one.

Read moreWe're staying one night in Denver on our way to Fort Collins from PA. I took my family to Tacos Sarabia tonight and felt like an absolute celebrity! With only one dinner in town, I was hoping for something memorable and "Mister Timo" and his family did not disappoint me in the slightest!
The second we pulled up, we could tell the spot was a vibe. Plastic tables, coolers on the lawn, some pop-up awnings and a big Bluetooth speaker playing really good music made this an absolute premier food truck experience!
I got 4 tacos each with different meat, my wife had a cheese quesadilla, and my daughter had an al pastor taco. The truck seemed really clean, they kept the screens closed the whole time except to take my credit card and bring out my food. Everyone was wearing hairnets, gloves and masks in the kitchen. The tables were spotlessly cleaned.
We sat and the owner, Timo, noticed I was thinking about how to open my soda and jumped right away to grab an opener before I could even realize I needed one. They brought our food out to us with some homemade sauces and we dug in.
Everything was absolutely delicious and I got 4 tacos thinking they would be pretty small but I ended up sharing half of two of mine because I was filling up fast!
We loved every bite but the special moments started after we were done and we got to talk with the family and hear about how they've run the truck over the last few years and work hard to make it special. They shared so much information with me about awesome things to see close-by that I think they could open a tour business as well.
Everyone was so charming and welcoming, we felt like we were old regulars by the time we left. I was so glad to stop here tonight and I would recommend them to ANYONE that wants a good meal and truly world-class service, yes, at a food truck in an industrial park off the highway.

I had the blessing to interact with the owner and one of the head chefs 👨🍳 👩🍳.
The rustic iconic food truck gives a very Mexican aura. Food was prepared with care and Mexican ranch style and great passion. Sauces were delightful, and the chile was hot for those daredevils.
The owner was persistent in satisfying his guest offering and severing beverages, and did I mention that the fresh flavored waters (aguas) are free!
The cook was very kind and socialable, and it seemed to have an extraordinary connection with the owner as they are father and daughter relationship. It was a pleasure to get to know them and chat about our culture and how much food means to us whenever we can share.
