Knoth’s BBQ is serious about barbecue, and they have two specialties: pork and brisket. They do a good job on both, and the brisket plate was reasonable - meat, fries and cabbage slaw for $8.95 – but the brisket didn’t have enough fat for my taste. I like a thick fat cap on a brisket, cooked long and slow so the fat can soak into the beef, making it tender. Today’s brisket was so lean, I’m wondering if they cut away the fat cap to make the meat healthier. My husband says if they did, it was the right thing to do because, “fat will make you fat.” Knoth’s has a lot of interesting wall art but is otherwise a no-frills – but spotless - paper plate kind of place. Other pluses: the wait staff is friendly, the kitchen is fast, and you can order meat to go: brisket is $12/lb., pork is $9/lb. ($4.05/lb. for a shoulder). Knoth’s is kinda off the beaten path: six miles from the interstate and 26 miles from Paducah, but is near the LBL campground. It appears to be a favorite of working men, and my husband says he knows why: “The food is good, especially the fries. Knoth's 1/2 pound chopped pork plate is the closest thing to spiritual nirvana you will find on this earth.
