I am not a drinker so I don’t explore bars much. I was pulled out tonight by my best friend for the last prime rib Thursday of the season. When I say that it was worth every penny would be a gross oversimplification and severe understatement.
The choice selection for the beef itself; the marbling, the excess fat was left on and not cut away for some weird presentation that steaks don’t have fat, this is where the soul exits the steak and enters the heavens of your tastebuds. To be appreciated by anyone that understands the prime of the rib. If I was left to my own device, I think I would not have chosen a better cut.
The preparation was nothing short of perfection. The sear cut straight to medium rare there was no detour or doctoring, The spices and twist to accent the restaurants atmosphere and well as tying it right back to the steaks own juices was nothing short of divine.
It was served with a cheesy potato plate that reminded me of the coveted and deceased fiesta potato’s of Taco Bell. If those potatoes wore jewelry that Riff Raff himself would adorn himsef in. This potato, having been brought up through a necromancy and dragged through a field of gold and cilantro is enough reason to drive 100 miles at least to have a tequila to pair.
Let me tell you something about brussel sprouts. I have had really bad dry steamed brussel sprouts. I have had amazing butter and onion sauté brussel sprouts with a truffle salt. And then, there are these brussel sprouts. Never in my life have I been so privileged to bestow upon my tastebuds, a brussel sprout. Similarly seasoned and holding strong to the ties of the meal, this was a laser sword of a vegetable side, paired with huge chunks of bacon these sprouts turned into an 80s thrash metal band that then released an entire orchestra of tingles into the flavor palette of my facehole.
To top it all off came a dessert. Cornbread. But not that dry cornbread you swallow with milk and cough up a dust cloud with a thumbs up when your grandma asks you how you like her prized recipe cornbread.
This here was a tres leches level wet jalapeño cornmeal baked to serve the gods. Both sweet and spicy, hearty, and light, a liquid that convinces you it is solid. It’s was an entire contradiction that you aren’t really ever ready to experience. This was the final boss of cornbread delicacy. Aptly shaped as a sugar skull.

The local patrons were equally inviting, and I instantly felt at home. Slogan says "Tequila bar and sometimes Restaurant"....and its perfect. The agave selection is something that everyone can explore, don't hesitate to ask for recommendations.
