I recently had the pleasure of dining at what I can only describe as the pinnacle of Mexican cuisine. This restaurant was an absolute gem, delivering an flawless experience from start to finish. Whether it was the tender, slow-cooked carnitas, the zesty fajita, or the melt-in-your-mouth enchiladas smothered in a rich, velvety mole, there wasn’t a single dish that didn’t leave me craving more.

The service was equally impeccable. The waiters were attentive without being overbearing, anticipating our needs with a warm, genuine smile. They moved with a graceful efficiency that made the evening feel seamless, ensuring our glasses were never empty and our plates were cleared at just the right moment. Speaking of drinks, the Pina colada was amazing. The cocktail menu was inventive yet approachable, and each drink was crafted with care.The decor was nothing short of stunning. Vibrant yet tasteful, it transported us straight to the heart of Mexico with its rich colors, intricate tile work, and thoughtfully curated details. When they found out it was my soon to be step daughter's birthday, the staff went above and beyond. Usually enjoy this place, the male servers are always kind and checking up on you, however the women I’ve had as waitresses, not so much. today I had a horrible experience here with my significant other. From the minute we walked in the service felt very rushed and like we were an inconvenience. The waitress we had not once smiled, the only words that were said were “What can I get for you”. No smiles, nothing. We asked for one more minute before we were ready to order and it took atleast 10 for her to return. After that we were not checked on once. The food was very disappointing, we got the fajitas for 2 and there was barely any meat, the meat that was there was chewy and very small. She never came to the table again, another man had to get our check for us. We left our tip on the table and noticed she was quick to get to that. Once we cashed out we weren’t even acknowledged, or told to have a nice day. I understand being busy, as someone who has worked in multiple restaurants with very high volumes, but it’s not that hard to show some kindness and attention to the people paying your bills. ...

Have been going to this restaurant for a few years now and the food has, in general, been pretty good. Chicken fajitas were consistently good. However, within the last year I have noticed a decline in other dishes. Valle Escondido’s chimichangas, burritos and fajitas are essentially all the same dish just plated differently. Chimichangas should be deep fried, however, the last two times I’ve ordered the 2 chimichanga dinner what I’ve gotten is a burrito (folded to look like a chimichanga) that has been briefly pan-fried not deep fried and so smothered in cheese dip that it was soggy and unappetizing.The first time I chalked it up to a new cook or some other issue in the kitchen. After the second time ordering chimichangas and getting a big soggy burrito, it seemed that some short cuts are being taken in the preparation of various dishes. Table side guacamole also seems to be more heavy on onions and lighter on avocados than it once was. This is all disappointing because Valle Escondido’s was once a go-to restaurant for my family. I’ll start with the good news first, my sales team were all very happy with our entrees. One of my coworkers had the golden enchiladas and he said it was the perfect portion size and delicious. I had the Carnitas and it was excellent! Perfectly tender and well seasoned meat and onions, but it could have fed a family of four. A few coworkers got margaritas, which were huge. For apps we had the table side guacamole and cheese dip. The guac was completely bland and the ratio between avocado and pico de gallo was way off. They need to add more avocado and some SALT! The queso dip was watery and tasted like flour. There was no cheese taste. Service was ok except for the huge lag in time between ordering apps and entrees. We were asked 4 times if anyone else was coming to which we said “no, can we order now?” and the server walked away. We were there for 90 minutes before our entree order was taken. It was a Wednesday night and not very busy.

First we ordered drinks, then it took a while for them to get there followed by another gap before we could order food which then took over 30 minutes to come out. They had the chip person working overtime to keep everyone distracted. I’ll be honest, I barely noticed how long it was till we were on our 4th tray of chips. Once the food finally got there, it was quite good. My burrito had the right amount of spice where you felt something but didn’t really feel overwhelmed. The leftovers held together well and it was still delicious the next day. Overall, this was a decent experience. Maybe at a different time it would be less busy but on Saturday night it certainly took a while.
