So, yesterday was my very first visit. I pretty much purchase a little bit of everything. Enchilada ball, pepperjack roll, cajun fries, tamales, and sliders. Let me tell you, EVERYTHING I tasted is amazing!!!! I seriously cannot pick one to be my favorite! The enchilada ball is like nothing I have ever had before and I am about to go get more now with my husband. The tamales are the best dang tamales I have ever had in my life and I am not exaderating. The roll ups are unique and delicious and the fries are a comfort food that you cannot stop eating. My kids never eat boudin but my son loved the sliders and my daughter absolutely LOVED the enchilada ball. This is the kind of business we needed in our little town and if you love cajun food and have not yet stopped in, even if you think you do not like cajun food, please, I urge you to try this because your tastes buds will thank you for it! I remember this place sitting empty for a ver long time with waffle shop sign and I never remember it ever open. My family had also had ideas for a business to open here. I am so very thankful that someone finally took the risk and now this is insane sausages. This is the best place to eat around here and I hope and pray that the owners see so much support from everyone and i hope they open multiple restaurants. Both meals were served to us cold. The rice was hard like it had been refrigerated for a few days then set out to room temperature. Even after I asked for it to be microwaved it didnāt do much to soften the rice. I added salt and pepper to make it edible. Not authentic ettoufee. Being itās a Louisiana dish I expected more. (it is a cream of mushroom recipe) Everyone knows thereās no cream of mushroom in a REAL crawfish ettoufee. Pulled pork didnāt have a smoked flavor and had a lot of pickles chopped into it. (Good pickles) Coleslaw was pleasantly different. Iād eat that again. Husband ordered a smoked boudain with our meal (also served refrigerator cold/hard rice). We asked for a refund on the boudain because one bite assured us we couldnāt eat it. Unique seasoning not suitable to our pallet. The bread pudding is a very basic dry recipe with a (ok at best) praline sauce. Our purchase was $32. Not a bad price for food if weād enjoyed it. As well as very good iterations of the classic boudin and pork sausage, they've gone creative with blends of ingredients and funny names. I picked up Steen's Syrup Sausage, and, Frito Pie Sausage, along with some boudin that got big thumbs up at the party.
Update: As noted above, I have a lot of respect for this place and their willingness to step outside the box and try some new iterations. You have to be adventurous. Sometimes it works. Sometimes it doesn't. Having said that, the frito pie sausage was not enjoyable for us. Lots of heat, a texture that wasn't pleasant, and a flavor profile that we all decided wasn't good enough to spend calories on. After our initial tasting and no interest from friends, we just threw it out.
And then, we sampled the Steen Syrup sausage. My wife asked if it had honey and I lied and said āyesā.
