The Roastery by Living Millennially — Restaurant in Maeystown

I went to try The Roastery out after seeing them post about a new drink with lavender in it 💜 I love coffee drinks with lavender in them so I chose to head out and take the gorgeous scenic route from Columbia to Maeystown on Bluff Rd. I arrived and was able to find the building and parking with ease. As I walked in I was greeted by a local sipping his drink. Once it was my turn I was able to ask the staff about the drinks they had with lavender. I learned they only use oatmilk as well as they have featured drinks and a staple on the menu that offered lavender!!! I ordered an iced Good Karma. While I waited for my drink I chatted it up with the gentleman and listened to him share bear stories from the creek behind the Roastery. The drink....well it's hard to put into words...but it was joy for my tastebuds ✨️✨️✨️ pure bliss!!! Once it was time to leave that same gentleman held the door open for me and I watched him ride off on his bike. I couldn't help to think I just met the Maeystown Indiana Jones while enjoying the best iced coffee...

This place is truly a hidden gem—emphasis on gem! 💎 Every visit feels like a little escape. The coffee? Absolutely top-tier. Whether you’re a regular or just passing through, you’ll be blown away by the quality and care in every cup. I especially love the rotating specials—April 2025’s creation still lives rent-free in my mind. 😉

But what really sets this spot apart is the people. The staff are genuinely kind, welcoming, and always up for a great conversation or recommendation. It’s more than just a coffee shop—it’s a space with soul. The vibe is warm, uplifting, and just the right mix of cozy and cool. I always leave feeling better than when I came in.

What a surpise! While visiting the Waterloo, IL Pumpkin festival, I stumbled upon the pop-up. The adorable pop-up camper transformed into a mobile beverage dispenser filled with incredible flavor pairings and friendly servers!

I wanted to try every drink! After a couple minutes of pondering, I decided on a chai-der(cold) and a mango tea. The iced tea was so refreshing. I was delighted that I could steep a warm cup later! The Chai-der was the BEST! Perfect combination of flavors...fall in a cup! I have to assume that you'd be delighted and refreshed with any of the other amazing drinks! Do yourself a flavor, order more than 1!
