I expected to be wowed by a lot of things at Big Bend. But I did not expect one of them to be the burger from El Gordo's.

The outstanding thing about this burger was flavor. Every bite was different - some char, some a bit spicy, some were a bit sweet. This was not a sterile, underseasoned generic burger. It was a taste of all the flavors created on that grill. That may turn some people off, but for Flavor Hounds like me, it is what takes this burger to the next level.

In terms of fundamentals, the toppings were perfectly proportioned to the burger size, the condiments complimented the taste, good thickness of burger and all that. But that flavor experience was what made this burger stand out.

El Gordo's is a 🌟 🌟🌟🌟🌟 food truck! We ate there three times on our 2-day stay in Terlingua. We had the Al Pastor tacos, tamales, and breakfast tacos. Everything is cooked fresh while you wait. Their Al Pastor was delicious, with fresh, real Pineapple diced on top and delicious cilantro and onions. The tamales were succulent! So hot, fresh, and just made! The breakfast tacos were delicious! We had the tacos as two types refried beans and bought extra chorizo as well and potato with buying extra chorizo. They were SO GOOD!!!! 😋 The refried beans were my personal favorite. El Gordo Grill is a gem of a food truck! We were blown away by their quick service, delicious food, and genuinely friendly staff. We ordered a variety of items—tamales, birria tacos, burritos, and quesadillas—and every single dish was excellent.

The tamales were perfectly steamed and packed with flavor, the birria tacos were juicy and well-seasoned, and the burritos were generously filled and satisfying. The quesadillas were cheesy perfection, with just the right crisp on the tortilla.
